Mornings in our household are so busy that breakfasts are often a rushed affair. I came across the idea of overnight oats a year or so ago and haven’t looked back. This is such a quick, easy and best of all super-healthy breakfast option.
So you simply put a third or half cup oats into a bowl and add an equal amount of water or milk (I use soy or almond milk). I also add a tablespoon of chia seeds for added goodness (if you do this add a little more liquid). You could also add your chia seeds the next morning if you like them crunchy. Pop your bowl into the fridge overnight and the oats will absorb all the liquid.
This is your base and when you take it out of the fridge the next morning you can add whatever you like. I like chopped up banana and honey with a good spoonful of LSA and a big dollop of greek yoghurt. Yum! This will fill you up until lunch time – no mid-morning snacking.
